Ingredients

  • 8 Medium potatoes, Yukon Gold
  • 2 Small onions, sliced thinly
  • 3 tbsp Olive oil
  • Salt and pepper, to taste

Directions

  1. Preheat grill on MEDIUM for 5 minutes. Prepare potatoes by scrubbing to clean the outside skin. Slice potatoes 10–12 times, 3/4 way through, leaving the skin intact, to create a fan. Insert onion slices into spaces created in potatoes. Brush with olive oil and season with salt and pepper. Wrap individually in foil, place on grill and cook for 40 minutes.
