Smoked Banana Bread

Ingredients

  • 4 cups of all-purpose flour
  • 2 tsps of baking soda
  • 1/2 tsp of salt
  • 1 cup of butter
  • 1.5 cups of brown sugar
  • 4 eggs
  • 4.5 cups of mashed, overripe bananas
  • 1/2 cup of crushed pecans (optional)
  • 1.5 tsp of cinnamon (optional)

Directions

  1. Preheat the pellet grill to 350˚F (175˚C). Line your cast iron rib roaster with parchment paper to prevent sticking.
  2. Combine the flour, baking soda and salt in a mixing bowl and set aside. In a separate bowl, cream together butter and brown sugar. Add in the eggs and mashed bananas and mix until well blended. Add the dry ingredients that you had set aside and stir until smooth. Pour the batter into the lined cast iron rib roaster. Sprinkle the optional pecans and cinnamon on top of the batter. Leave off the lid for the rib roaster.
  3. Bake inside the preheated grill for approximately 65-75 minutes, until a toothpick inserted into center of the loaf comes out clean. Remove the cast iron roaster from the grill and let cool until transferring the loaf onto a cutting board or wire rack. You can use the rib roaster to store the loaf in the fridge or wrap in plastic wrap.
