Smoked Maple Cinnamon Cookies

Setup

Must have Smoked Flour Recipe

Line a baking sheet with parchment paper, rub a small amount of oil onto the parchment paper to ensure the cookies don't stick.

Ingredients

Dry

1 cup smoked flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2  teaspoon cinnamon

Wet

1/2 cup softened butter

1/3 cup brown sugar

1/4 cup maple syrup

1 egg yolk

1 teaspoon vanilla or maple extract

Directions

1. Heat BBQ to 350° F, indirect heat. Left two burners on, right burners off.

2. Using the Creaming Method, mix your butter and sugar together until light and fluffy and all the sugar is dissolved. 

3. Add maple syrup, egg yolk and your flavour extract.

4. Mix dry ingredients separately, combine wet and dry until just mixed. (if the dough feels loose because of the added maple syrup, add 1-3 tablespoons of plain flour.

5. Chill in fridge 15 minutes before baking

6. Scoop dough into balls (cookie scoop or tablespoon) 

7. Slightly flatten each ball using a fork both vertically and horizontally to create a “grilled” look on top of the cookie.

8. Place the tray on the cool side of the grill and close the lid. Bake 12-15 minutes rotating halfway through the baking process.

9. Remove from grill when the edges start to turn golden brown and the center is still soft. Allow the cookies to cool on the tray for 5 minutes before transferring to a wire rack or a Broil King Stack-A-Rack.
