Ukrainian Style Pork Stew

Ingredients

  • 1 pork shoulder
  • 2 tablespoon olive oil
  • 1 tablespoon Worcestershire
  • 2 tablespoon soya sauce
  • 1 teaspoon thyme
  • 2 large onions
  • 2 tomatoes peeled
  • 2 tablespoons grainy mustard
  • Salt and pepper

Directions

  1. Slice pork into thick slices and marinate in olive oil, Worcestershire, soy sauce, thyme, and salt for no more than 1/2 hour.
  2. Smoke at 250°F (121°C) for 2 hours until pork is extremely tender.
  3. Let cool for 15 minutes.
  4. Chop pork into cubes and place in a roasting pot.
  5. Place rough cut onion, peppers, and tomatoes on top with 2 tablespoons of grainy mustard.
  6. Stew uncovered at 350°F (177°C) for 20 to 30 minutes.
