- 2 racks of side ribs
- 1 teaspoon rosemary
- 1 tablespoon garlic
- 2 tablespoon chili sauce
- 2 tablespoon olive oil
- 3 bell peppers
- 5 large potatoes
- Salt and pepper
Directions
- Marinate the pork ribs with garlic, rosemary, chili sauce, salt, pepper, and olive oil.
- Chop peppers and potatoes into large chunks and season with salt and pepper.
- Roast the ribs on the vegetables in a grilling wok or in a roasting pan at 350°F (177°C)
- Roast the ribs on top of the peppers and potato wedges for 1-2 hours or until pork reaches an internal temperature of 160°F (71°C).
- Brush pan with oil to prevent sticking.
