2 hours before grilling, generously salt both sides of your steaks and place on a wire rack uncovered in the fridge.
30 minutes before grilling, remove steaks from fridge, dab dry any moisture that has come to the surface with a clean paper towel.
Place the dry brined steaks into a large Ziplock and add 4 tbsp or 60 mL of The Perfect Steak marinade.
Remove from marinade, place onto a pan lined with paper towel and pat the steaks dry. Season with salt, fresh cracked pepper and 1 tsp of the perfect steak seasoning per steak.
Turn on pellet assist and hit the 225 F preset.
Place steaks in the middle of the grill, directly over the water bath and directly on the grids. Insert an iQue probe to monitor the temperature. This step depending on thickness of the steak will take anywhere from 30 - 90 minutes. You want to smoke your steak until you get to an internal temperature of 118 F.
